Tortilla Espanola
In a skillet, cook potato and onion slices in a large amount of strong tasting olive oil until tender. Salt and pepper liberally. Pour beaten eggs into skillet and continue cooking. When the egg is done, flip the tortilla onto a plate and enjoy with a cheap Spanish wine as I have.
